Cozy season is starting to get even cozier here in Colorado. With the fall leaves long gone the thoughts of the holidays are becoming more frequent. One of my favorite ways to celebrate the season is with mulled cider otherwise known as Glögg in Sweden. So I decided to take this cozy beverage and turn it into this delicious glögg muffins recipe.
Glögg is a Swedish tradition that is made around the holidays. The Swedes love it so much that they celebrate with Glögg parties every weekend of December. It is typically made as a mulled wine or spirit but can also be made with fresh-pressed mulled cider.
I typically buy my seasonal cider from Ela Family Farms. And this year they had plum butter that is absolutely divine so I had to add them to the muffins. Make sure to check your local farmer’s markets and farms stand to see if you can find locally made cider and plum butter for your muffins. This Glögg muffin recipe is delicious to make for a cozy autumn breakfast. Or for a holiday party for Thanksgiving or Christmas. Either way, I hope you enjoy this healthy Glögg muffin recipe. Glögg Muffins Recipe
1 cup of whole wheat flour
1 cup of almond flour
1/3 cup of rice flour
1 tbsp of cinamon
1 tsp of cardamom
1 tsp of nutmeg
1 tbsp of baking soda
pinch of salt
Zest & juice of 1 orange
2 tbsp of plum butter (optional)
1 1/2 cups of fresh pressed cider
1/2 cup of maple syrup
1 cup of unsweetened cranberries
1-2 apples chopped (depending on size)
1 cup of sweet potato puree
1 tbsp of vanilla extract
1 tbsp of olive oil
grated ginger 1 in piece
Combine all dry ingredients. Then combine all wet ingredients in a blender. Mix wet and dry together and fold in try cranberries or any other dry fruit or nut of your choice. Also, add chopped apples in for extra goodness. I hope you enjoy this Glögg muffin recipe. Let me know how they turn out!
